Xoài gọt vỏ, cắt nhỏ. Chanh vắt lấy nước, bỏ hạt. Hòa tan 100g bột bắp với 150ml nước lọc.
Xay nhuyễn xoài đã cắt rồi cho vào nồi, đun lửa nhỏ cùng với 60g đường, 1/4 muỗng cà phê muối và 1 muỗng cà phê vani.
Khi hỗn hợp xoài sôi thì cho nước bột bắp đã pha vào. Tiếp tục đun và khuấy đều đến khi hỗn hợp hơi đặc thì cho tiếp nước cốt chanh vào và đun tiếp cho hỗn hợp đặc lại thì tắt bếp.
Phết đều 1 muỗng cà phê bơ lên màng bọc thực phẩm rồi lót vào hộp. Cho hỗn hợp xoài vào, ấn nhẹ và cán đều ra cho bằng mặt.
